Well, I know the name now but I still don't understand why they kept it a secret through the entire first movie and a bit of the first part of the second movie. What significance is keeping it a secret? I don't see how knowing the name changes anything in the story. Someone explain?

It doesn't. It just makes you wonder what her name is and more or less is a tactic to make you pay more attention to the movie. Plus its another artsy tactic, a lot like the rest of the stuff in the movie. Probably another thing taken from old Kung Fu movies or Westerns. (ex. The man with no name, Clint Eastwood movies)
If you knew her name was Beatrix Kiddo from the get go, you may go, what the hell is this wierd crap and leave. (although I doubt it.)
Although in the 2nd movie, you realize after you find out, that all the times Bill calls her Kiddo, its not a pet name, so that was interesting. ;D
